Mountains® “Bûche de Noël”
Ingredients
For the sponge
3 eggs – 100g sugar – 30g flour – 50g corn flour – 1tsp baking powder
For the filling
200g butter – 250g chesnut purée – 90g dark chocolate
Recipe
Beat together 3 egg yolks with 100g sugar.
Whisk the egg whites into peaks and gently fold in.
Add dries.
Grease tray and bake at 210°c for 10 minutes.
Roll the cake in a damp cloth and leave to cool.
For the filling, mix together 200g butter & 250g chestnut purée.
Unroll the cooled cake and spread 2/3rds mixture on it and roll it up again.
Melt 90g chocolate and mix with the rest of butter/chesnut purée.
Coat & decorate.
